According to the Vegetarian Society there are a great many worthwhile health advantages to vegetarianism. These include a much lowered chance of developing gall-stones, kidney stones, hypertension and diet-related diabetes. There's a 30 per cent less heart disease risk and the risk of some cancers is reduced by as much as 40 per cent. You're very much less likely to contract food poisoning and the chances of falling prey to the human mad cow disease are much reduced too.

There are now some Vegetarian Term Life policies on the market. Just a few at present, but it's thought that their popularity will increase. Vegetarians are starting to be rewarded for their healthier life style by cuts in insurance premiums.

It's a sensible move. After all if insurers find that vegetarians are so much less likely to die prematurely and in fact to live much longer. It's a case of everyone wins.

A spokesman for one insurance company made the statement "In simple terms, vegetarians live longer and are healthier throughout their lifetimes."

It's not just the vegetarian diet, but the lifestyle of the type of person who is a committed vegetarian. They're less likely to drink to excess, or smoke and probably more likely to take exercise as a matter of course. Even if the exercise is little more than tending their vegetable plot - recent reports of waiting lists for allotments are amazing and it seems everyone is finding vegetable and fruit growing to be rewarding in more ways than one. This particular insurance company has been offering a healthy discount - 25 per cent - on the first year of premiums.

A study of some 11,000 people, carried out over 12 years, showed very clearly that vegetarians have lower mortality rates in many major areas than non-vegetarians. It's thought the there are some 4 million vegetarians in the UK. Obviously some are more committed to the idea than others and sometimes a bacon butty smell wafting past can tempt all but the most determined. However, the blood pressure monitors, the cholesterol test results and the scales will show the full story and therefore slightly easier to stay on the straight and narrow.

Maybe you're not convinced? Years of T-bone steak and chips and the old standby of chicken in a basket doesn't train anyone down the veggie track. At one time the nation's favourite meal was a Sunday lunch of roast beef and Yorkshire pud with all the extras. However, given all the facts, maybe you'll get on to your insurance broker and see what's available for those attempting to change their lifestyle. Sushi has become increasingly popular a delicious but simple combination of rice soaked in rice wine and raw fish has become a massive favorite amongst American and European dinners a like. After all who can resist it enticing and delicate flavor which for some reason just isn't the same with out firery wasabi paste.

The taste of wasabi or wasabe paste as many know it has may be more than just a basic accompaniment to the sushi. It is said that the wasabe kills the bacteria in fish even if the fish is not exceptionally fresh.

If you enjoy good food and have reasonably deep pockets sushi is a great choice. It is costly for a couple of reasons one the quality of fish required goes beyond what you might buy for other dishes and also the attention to detail goes beyond what would be required for most meals. The skill being in the knife work of preparing the sushi.

You could of course prepare your own sushi ... You'll need a good amount of time as the process cannnot be rushed and a high level of confidence with sharp knives. Maybe it is this combination of labor and skill that means most dinners either choose to buy ready prepared sushi or dine out at one of the number of eating places serving such food.

Be aware that this is not all about the fish and is much more about the skill of the knife. Prepare sushi with out the required knife skills and it will look soggy and grainy- It will look as if the fish has been attacked rather than prepared with great skill.

You can't cheat with the rice, too. It's got to be authentic Japanese rice, preferably cooked rice-cooker-style. As a final word, never confuse sushi with its "cousin," the sashimi. The basic difference is the rice! Sashimi doesn't come with rice, you have to order it separately, unless you intend to it as it is (with wasabe, of course).

Types of sushi are many, but with out exception all are served with rice. Most commonly know is the sushi roll or maki which is made using nori (seaweed) and served in slices of six parts. In addition there is nigiri or hand made sushi usually prepared in pairs. In addition to these more common types there is also pressed sushi (squares) or oshi, and bean curd sushi rolls or inarizushi.

Chirashizushi or scattered sushi consists of rice spread in a box or bowl with nine different types of fish scattered on top is just another type of sushi. Others include Chankinzushi which is prepared sushi rice omelet wrapper shaped and tied like a ladies drawstring purse (slightly similar to chinese dim sum). Some times a solitary shrimp or pea decorates the ruffled part of the wrapper. We can't ignore the amazing sushi art of Saikuzushi or festival sushi where rice is colored and then created in to sushi rolls with intricate designs and patterns

Makezushi is sushi rice, mixed with vegetables and seafood that has been molded into bowls or square tins and covered with strips of omelet, shrimp and vegetables. Fukusazushi is a variation of this, where the square-molded rice mixture is wrapped in a thin sheet of omelet. This is turned over to conceal the seams and garnished with a nori ribbon and ginger.

Lastly we have Temarizushi which are rice balls wrapped in thinly sliced marinated fish. Itadakimasu! (enjoy your meal)
