Often such diagnoses come after years of discomfort, sickness and after a multitude of tests, visits to doctors and hospitals all with their theories of what might be wrong with you or your loved one. This process can be especially distressing when the loved one involved is a child of yours.
The news of the diagnoses often doesn't start to sink in until we do our research and start to understand just how many things contain gluten. One of the most distressing things that I learnt was that wheat, and therefore gluten, was used as a thickener for many things including apple sauce, soups and even on frozen chips to keep them from sticking to one another.
Not to mention being in a lot of chocolate!
We learnt what many of the little numbers meant on the sides of those tins and after much experimentation, started to develop and staple group if recipes that we could have as a family. I was the only one in the family with a gluten intolerance diagnosis but my husband and I decided that it would be best if all of us went gluten free.
Our two boys who were 4 and 3 years old had not been tested but I had four uncles who were celiac so we thought it would be wise to get our boys tested at some stage. So we began to adjust to our new diet and I felt much better than I had before I went on the diet.
Then the next chapter of our story started. That is, we were invited to the family parties, etc, and started to let others know of my intolerance.
Gluten Free Help (http://GlutenFreeHelp.info) is a hot new gluten-free extravaganza online, created by Tina Turbin, the author of the award nominated book, "Danny the Dragon," and "Show Biz Kids". Her site provides enlightening information for those with gluten intolerance and Celiac Disease, as well as recipes and ideas for your gluten-free shopping list.
What caught our eye at first were her recipes. Yes! Gluten-free brownies! She provides useful advice on such things as gluten-free baking flour, in detail, to communicate her full knowledge. Yum, almond flour sounds delicious! After perusing her blog we visited other pages to find she even shares her favorite things. Did you know that a magazine exists about gluten intolerance? It is "Living Without". What a find! Tina also contributes what she has learned about the subject of gluten intolerances and how it may or not play a roll in specific women's conditions such as Endometriosis and Fibroids.
We found the section on Celiac and Gluten Sensitivity easy to understand and insightful. It is short and to the point. You do not have to be rocket scientist to understand these conditions the way she communicates them.
In an impromptu interview last year Tina mentioned that she was midst hiring staff to test out recipes with her in her East and West Coast kitchens. Later we learned that after battling her own health issues, she finally realized through her own online research what the problem might be and has been living happily and healthy gluten-free now for years. Will she continue to provide us with her free advice? I know she is much the humanitarian, helping others as much as possible, in various ways, evidenced by the free advice on this subject alone. We would like to see her write a gluten-free cookbook next. Well, she is working on a gluten-free children's cook book!
