Turn simple bananas and peanut butter into a delicious gourmet breakfast with just a few extra minutes of cooking.
Nonstick cooking spray
1 banana, cut in half lengthwise
1 slice 2:90 whole-wheat bread
1 tablespoon natural peanut butter
Pinch of ground cinnamon
Pinch of ground nutmeg
Heat an 8-inch nonstick skillet over medium heat. Spray with nonstick cooking spray. Place the halved bananas, cut-side down, in the skillet and cook for 2 minutes. Turn the bananas over and cook for another 2 minutes, or until soft and golden-brown.
While the bananas are caramelizing, toast the bread, spread with the peanut butter, and sprinkle with the cinnamon and nutmeg. Cut the caramelized bananas in half crosswise and arrange side by side on the peanut butter.
