An environment that is acidic is the perfect playground for fungus to thrive and grow. That is exactly why an acidic atmosphere can produce an overgrowth of candida and maintain it forever.

Candida albicans is a yeast fungus which, under ordinary circumstances, lives in balance with all of the other micro-organisms in the body. Candida albicans survives by living on high sugar levels and is normally kept in line by the other micro-organisms in the body, especially the bacteria Lactobacilli.
