INSTRUCTIONS FOR COCONUT RICE
in a pot add ½ cup of coconut cream with the sugar in a medium temperature. Stir until it gets dark brown (like a paste) but without burning. Add ½ cup of coconut milk and ½ cup of warm water, and stir until the crumbs of the paste are dissolved. (at the end if still have a few little crumbs that is fine, do not need to dissolved them all). Add the rice and salt to balance the sweet (approx. ½ tsp) at high temperature and stir a little bit to scatter the rice. Add the raisins. Let the water boil, reduce temperature to medium until you see little holes in the surface (stir the rice) make sure that the water is dry before covering the rice. Cover the rice with a lid for about 30 minutes in low temperature. Delicious coconut rice is ready to be made.
once the heat is off, let the rice pot covered for some 10 minutes. this will concentrate all the flavors and the rice grains to get spongier.
