He's called he professor because of his professorial look - Piercing gaze and highly analytical at the tables. Before he became a pro or ever dabbled into poker, he used to be a professor of linguistics, an excellent chess and backgammon player. By 1990, this Full Tilt Poker Professional became one of the most fearsome poker players in the whole world.
