Black Bean Soup

If you love black bean soup like I do, then you’ll enjoy this homemade version featuring black beans, chicken breast, rice and salsa.

3/4 cup chopped celery
1 medium onion, chopped
3 garlic cloves, minced
1 tablespoon canola oil
3 (14-1/2 oz.) cans chicken broth
2 (15 oz.) cans black beans, rinsed and drained
1 (16 oz.) jar salsa
1 cup cooked chicken breast, cubed
1 cup long grain rice, cooked
1 tablespoon lime juice
1 teaspoon ground cumin

Directions

In a large saucepan, sauté the onion, garlic and celery in the oil until vegetables are tender. Stir in the remaining ingredients and heat thoroughly.

Makes 10 servings
