Here is a really delicious and ridiculously easy recipe I've been experimenting with these last weeks. I have a friend who makes a real killer paella -- she's from Spain/North Africa -- and while I have no pretensions of making anything nearly as good, I've been trying to recreate the basic taste. Because of a sketchy cholesterol level, I try to avoid ingesting large quantities of seafood. The recipe I've developed carries the distinctive taste of Paella, without the seafood. It has, however, large quantities of fat-engorged sausages! This recipe is super-simple to make, and will not dirty great numbers of pots and pans. Here's what you'll need:
Now on to ingredients:
First off, take care of the disagreeable stuff. Cut and mince the garlic, taking care to remove the stems. Cut and clean the bell peppers, and cut the Merguez sausages in small bite-size pieces. Pour the oil -- about 2 tablespoons, or 4 -- and fry the garlic. When it starts to brown, add the sausage and fry them until they are nicely browned on the outside. Then add the rice to the mix, making sure to stir well so the rice is well coated with the oil and the grease from the sausage. The rice should take a nice red tint. After mixing well, add the red bell peppers, that have been lovingly cut into small pieces. Once again, mix well and add the chicken broth, and sprinkle with a healthy dose of curcuma. Bring to a boil, cover and lower the heat to just above minimum. That's it! Wait for about 25 minutes, stir everything up to make sure that all the broth has been absorbed by the rice, and serve, pipping hot! This is a great recipe that takes very little time to prepare, and smells and tastes GREAT! Fantastic food for when it's cold outside!
