In Canada there are 2 million individuals with diabetes and in the United Kingdom there are over 1.7 million. The World Health Organization (WHO) has targeted diabetes as a major threat to global public health, because of the infrastructure and financial resources needed to treat the disease. WHO estimates that by 2030, the number of people with diabetes will have doubled. Diabetes mellitus, usually called diabetes, is a condition in which there is an inability of the body to produce or use insulin, which is a hormone produced by the pancreas necessary for the utilization of glucose. This wonderful breakfast recipe is tailor made for any person with diabetes. Diabetic Apple-Packed Omelet Makes 1 Serving 2 egg whites 1/4 teaspoon salt freshly ground pepper, to taste 1 tablespoon freshly grated Parmesan cheese Filling: 1/2 apple, cored and diced 1 teaspoon brown sugar dash each of ground cinnamon and ground nutmeg 1/4 teaspoon vanilla extract 1 tablespoon chopped pecans, toasted 1. To make the filling, combine the apple, sugar, spices, and vanilla in a small saucepan. Cook over low heat, stirring occasionally, until tender. 2. Beat the egg whites until soft peaks form. In another bowl, beat the egg until light yellow in color. 3. Season with salt and pepper. Fold the egg into the beaten egg whites. 4. Heat an 8-inch nonstick skillet over medium heat. Spray with cooking spray. Add the egg mixture and as the eggs set, lift to allow liquid to flow under. 5. Cook until almost set. Sprinkle with Parmesan and broil until the top is set. Spoon the apple mixture on one side and fold in half. Sprinkle with the pecans.
