Green And Black Olives

There seems to be quite a bit of confusion when it comes to different olive colours.
A quick search on sites like yahoo answers will show many people simply do not know what the colours mean in relation to the fruit.We see questions like-Do different coloured olives grow on differerent trees,is a black olive a gone oof olive and many more along a similar vain.

I hope we can easily clear up some of the misconceptions.
In the simplest of terms any olive tree that produces fruit will first produce green olives. For the most part these olives will eventually turn to black olives. This is simply the ripening of the fruit. The colour changes as the fruit ripens.
Normallly speaking the darker the olive the more oil it contains but only up to a certain point. Once the fruit has fully matured it will then begin to shrivel as any fruit left overly long on the tree is prone to do. This will mean that it then slowly begins to lose some of its oil content so picking is an important factor in maximum yield.
However when taste also comes into play a myriad of other factors come in to play as the olive will taste differently and will give different characteristics to an oil depending on the maturity of when it is picked. This is where personal taste is an important factor.

To sum up though both colours of olives can come from the same tree it is purely a matter of ripeness of the fruit. For such a little fruit it sure can lead to a lot of complications and misconceptions.
