The Perfect Potato Crisp, Granny Knows Best |

I can remember ages ago when I was a kid my grandmother would never let me eat any crisps or anything like that unless she made them herself... I never liked her biscuits or cakes or anything but her potato crisps where lovely, and I've been trying to find out how she made them for years and I now think I've finally sussed it. After spending months trying different ways of frying them I decided to try baking them instead and low and behold the perfect crisp! Just don't deep fry them (mine where always greasy way too greasy), bake them instead. Prepare 2 Large Potatoes (I usually use Maris Piper or King Edwards) 30ml (2 Table Spoons) Olive oil (You can use any oil but I think Olive tastes best) A little Thyme, Salt and Black Pepper Heat your oven to around 200oC - 230oC and while its heating slice your potatoes into slices of around 3mm and toss them around with the Olive oil and Thyme. Place the crisps onto a baking tray in a single layer and bake for around 10 - 15 min until they start to brown, turn them over and continue to bake for a further 15min. Take them out and season with salt and pepper or whatever you fancy for that matter. Just remember to keep checking them while there cooking because they never seem to take the same amount of time twice. I think they taste best when they are still warm. My little sisters love them and there great for an evening with friends with a couple of drinks or a movie. Two large potatoes are enough for 2 or 3 people. I've tried cooking other vegetables and fruits like this, carrots are nice too! Give it a try and if you know any better ways to make them or flavour them let me and everyone else know.
