Being a fan of Japanese food (especially soba), we went to Shimbashi Soba at Paragon for dinner. I ordered the soup soba with egg and seaweed. It costs $14 for the yummy soba, totally worth the money. The ambience at Shimbashi Soba is quiet which makes a great place for chats while having your meal.
The soba served here is excellent! It is freshly milled, freshly handmade for the day. It is not overcooked, so it\'s not too soft and retains its chewy texture.I also like the soba sauce here. You are given a raw quail egg to mix into the soba sauce which makes the soba sauce a little thicker and more flavourful. I really enjoyed slurping up every last strand of soba dipped in the sauce. After your soba meal, you will be offered hot soba water. It is essentially water used to cook the soba in and we were told it retains a lot of nutrients and vitamins. You are suposed to mix it with the remaining soba sauce that is left for an after meal drink to aid digestion. I\'m a little skeptical about the nutrients and aiding digestion part, but the special "soba tea" was a tad salty but not too bad at all!
And if you order any two soba set or set meals, you will be entitled to get a mini dessert for an additional $4.We had the Mini Anmitsu which was a delightful dessert served with fresh fruits, mochi and ice cream, bringing a satisfying end to our meal. The service here was also very good; we had a very enthusiastic waitress serving us and she explained the dishes patiently to us and also asked if we enjoyed the meal.
It gets really crowded during lunch and dinner hours but if you are able to pop by at 3-5pm weekdays, there are special promotion sets available.
Im not a fan of soba but that day i sudden craving for soba so we went for a try
I ordered a simple cold soba with the classic dipping sauce
the dipping sauce here retained its flavour to the last strand of noodle. At the end of the meal, they even give a small jar of Soba yu (the water used to cook the noodle), whichsupposed to pour into the leftover dipping sauce & savour it as a broth,It was quite interesting & also we can see them make the soba on the spot

If you are looking for nice japanese set meal to eat, then you can head down to Shimbashi Soba at paragon!Looking at the picture, it has quite a variety. It has a bowl of ramen and other sides.
I feel that this meal is worth it.
As my boyfriend loves soba, we decided to dine at Shimbashi Soba at Orchard and ordered a set meal of cold soba that came with side dishes such as grilled unagi, half cooked salmon and fried karage chicken.
The fried chicken was quite good- crispy on the outside and soft, tender and juicy on the inside. The unagi was quite nicely cooked as well. The salmon was a turn-off however, and i would prefer raw salmon sashimi anytime!
The cold soba came with a salty sauce and tasted quite good.
Yes, although I\'m a self confessed Jap freak, this is like literally the first time I ordered a main menu from the soba list. Usually taken as a side dish this time I ate it whole cold. It was the hot weather than drives me mad and my friends and we ate mad ordering many things.
This was I ordered a mix of soba nad udon with the cold sauce. The sauce was light and sweet so I added soy sauce (well sorry I\'m a salty person). They added the fish flakes on top of the udon and seaweed on the soba. It did make a difference as it was plain with only the noodle! But it was just right for the taste and for the weather. Or either because we were starving as well. Better than the other sobas tried in town! Spending: Approximately SGD 20
For Soba lovers, and those who have yet to try Japanese soba, forget the rest of the conventional, grade B soba you get at otherJapanese restaurant. If Shimbashi soba does not have the soba you like, you are probably not fated to savour soba.
At Shimbashi @ Paragon, there is usually a dinner time queue, but it will eventually fade to short waits. The soba is made from freshly grind buckwheat flour at the same time you place your order for food.
I personally enjoyed soba in warm duck soup. Like a salad, they offer cold soba too! With generous servings of Japanese wild vegetable and kelp.
Also try the salmon slices topped with raw quail\'s egg.
Needless to say, service and environment at Paragon is excellent.
At the end of the meal, they serve bowls of soba water, which is water used to cook the soba noodles in. It is a nice warm soup like the water you get from cooking porridge in. It has all the essential nutrients that soba has to offer.
