Lunch is a large healthy organic salad which should consist of at least seven different vegetables. Choose vegetables of differing textures and colours. This will make your meal more interesting and the various tastes will more enticing.
Choose from the following list. You can chop, slice, shred or cut your vegetables into a different shapes and sizes. Once prepared place your vegetables into a small salad dish:
Cabbage (red or green)
Radicchio
Carrots
Kale
Turnips
Parsnips
Fennel
Radishes
Beetroot
Chard
Celery
Yams
Collards
Sweet potato
Broccoli
Lettuce
Peppers
Swedes
Spinach
Watercress
Lamb's lettuce
Rocket
Also include salad vegetables such as:
Lettuce
Cucumber
Tomato
Create a dressing for your salad vegetables.
Lemon and olive oil, or curried dressing are tasty. Experiment with different condiments and seasonings.
