Filipino cuisine has some of the most unique and delectable collection of delicacies. Among of the many favorites of Filipinos, even those Filipinos abroad, is the Filipino dish Adobo. Adobo is the Spanish word for seasoning or marinade. The noun form is used to describe the actual marinade or seasoning mix, and the term used for a meat which has been marinated or seasoned with an adobo is referred to having been adobada.
While there has been debate amongst local food historians as to what the national dish of the Philippines actually is, most Filipinos consider adobo (pork and/or chicken) to be the dish of their country. But aside from Adobo, there is another Filipino delicacy which is quite popular with bigger and grander celebrations.
Now an Adobo can be cooked anytime, even without an occasion. But this particular Filipino dish is more popularly seen on a special occasion or celebration, and this Filipino dish is the .
Lechon is a Spanish term for Suckling pig. In the Philippines, it connotes a whole roasted pig or the Philippine Lechon Baboy. Chicken and beef are also popular in some parts of the country.
The process of cooking a Philippine Lechon involves the whole pig or piglet, chicken, or cattle or calf being slowly roasted over charcoal.
The Philippine Lechon is often cooked during national festivities, on the holiday season, and other special occasions such as weddings, graduations, birthdays and baptisms, or family get-togethers.
